CHOCOLATE MUFFINS | |
1 1/2 c. all purpose flour 1/2 c. cocoa 1/4 tsp. salt 1/2 c. sugar 3 tsp. baking powder 2 eggs 3/4 c. milk 1 tsp. vanilla extract 4 tbsp. unsalted butter, melted Butter mold of muffin pan. Sift together flour, cocoa, salt, sugar, and baking powder into a bowl. In a separate bowl, beat the eggs lightly, then beat in the milk, vanilla and melted butter. Add the liquids to the dry ingredients and stir quickly. Spoon into the buttered molds, about 3/4 full and bake in a 425 degree oven for 15 minutes, or until lightly browned. Remove from molds immediately and serve with fresh butter. Makes 24 muffins. |
