MOCK FRIED CHICKEN 
1/4 c. low-fat (2%) milk
1/4 c. yellow cornmeal
1/4 c. bread crumbs
2 tbsp. chopped fresh parsley
1/8 tsp. nutmeg
1/2 tsp. each salt and pepper
1 chicken (3 1/2 lb.), cut into 8 serving pieces, skin removed

Preheat oven to 400 degrees F. Spray baking sheet with vegetable cooking spray.

Pour milk into shallow bowl. Mix dry ingredients in plastic bag. Dip chicken one piece at a time in milk, then coat with cornmeal mixture. Place on prepared sheet. Bake, turning pieces once, until cooked through, 30 to 35 minutes. Makes 4 servings.
