MOCK CRAB ENCHILADAS 
1 lb. mock crab, shredded
1 med. onion, thinly sliced
1 green pepper, sliced & diced
1 sm. can sliced black olives
1 lg. pkg. cream cheese
1 sm. container sour cream
1 c. grated Cheddar & Jack cheese
1 doz. corn tortillas

Saute crab, onion, pepper and olives in skillet. Stir in cream cheese and sour cream. Stir well and simmer at low heat. Spoon mixture into tortillas, roll up tortillas and place into shallow baking pan. Sprinkle with both types of grated cheese. Bake at 350 degrees until cheese is melted. Serves 4.
