BRANAPPLE CUPCAKES OR COOKIES 
1 c. chopped dates
1/2 c. orange or apple juice concentrate
1 1/2 c. quick oats
1 1/2c. raw bran (oat bran is best)
1/4 c. raw cashews (optional)
1/2 tsp. salt
2 tsp. vanilla or vary with 1 tsp. almond extract
2 c. grated sweet apple, Golden or Red Delicious

Blend cashews, orange juice, dates, salt and vanilla until very smooth. Remove to bowl and combine with remaining ingredients; mix well. Allow to stand 10 minutes, then fill cupcake tins 1" thick. Try mini cupcake tins for just the right size. For cookies, spoon onto non-stick cookie sheet and bake in mounds or flatten with moist fork. Bake at 375 degrees for 30 minutes for cupcakes; less for cookies. Do not allow to over brown. This is a very moist cookie. If not used in a few days, freeze to preserve.
