STUFFED MUSHROOMS 
12-14 lg. mushrooms, cleaned
3 tbsp. butter
1/4 c. finely diced onion
1/4 c. finely diced green pepper
1/4 c. finely diced celery
1 (3 oz.) pkg. cream cheese, softened
1 tbsp. lemon juice
1 c. soft bread crumbs (wheat is best), about 2 slices
1/8 tsp. pepper
Salt to taste

Break stems from mushrooms, clean out centers. Chop stems. Saute in butter the onion, green pepper, celery and chopped stems. Microwave about 2 minutes. Add cream cheese and stir to mixture. Add lemon juice, crumbs, pepper and salt. Fill each mushroom with this mixture. Place on large plate. Cook in microwave four minutes. Turn plate after two minutes. Very large mushrooms may take longer. For conventional method of preparation, bake in 350 degree oven for about 10 to 12 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
