ZUCCHINI BREAD OR BARS 
3 eggs
1 c. oil
2 1/4 c. sugar
2 c. grated zucchini
3 tsp. vanilla
1/4 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1 c. chopped nuts
3 c. flour

Preheat oven to 350 degrees.

Beat eggs until light and fluffy. Add sugar, vanilla and oil. Blend well. Stir in grated zucchini.

Sift flour, baking powder, salt, soda and cinnamon. Blend with creamed mixture. Fold in nuts.

Turn into 2 greased and floured 5x9 loaf pans. Bake for 1 hour. Batter may be poured into a large 10x15 pan and bake for 25 minutes or until done. Frost with cream cheese frosting.
