BEEF ROULADEN 
6 thin slices beef
1 lg. onion, sliced
6 sweet pickles, sliced
6 slices bacon
Salt and pepper
6 tsp. mustard
Fat
1 can consomme
1/2 c. dry red wine
1 tbsp. shortening
Flour

Sprinkle salt and pepper on slices of meat. Spread mustard on slices. Top with slice of bacon, 1 sweet pickle, and onion slices. Roll and secure with string or toothpick.

Brown rouladen in hot fat in skillet. Place rouladen in casserole. Cover with consomme and wine. Simmer 1 1/2 to 2 hours at 350 degrees. Remove rouladen. Thicken gravy with flour.

NOTE: If desired, rouladen may be covered with water or a plain gravy made from pan juices in place of consomme and wine.
