OLD FASHION LEMON PIE | |
1 c. sugar 1/4 tsp. baking soda Pinch of salt 3 eggs separated (whites for meringue) 3 tbsp. sugar (for meringue) 1 (9 inch) pie shell 3 heaping tbsp. flour 1 c. buttermilk 1 tsp. butter Rind and juice of 1 lg. lemon Add soda to buttermilk. Add salt and flour to sugar and 1/2 of buttermilk mixture for a thick paste. Put in egg yolks and add remainder of milk. Cook, stirring constantly until thick (may be slightly lumpy). Add butter, grated rind and juice of one lemon. When cool, pour into baked pie shell and top with meringue. Beat 3 egg whites until stiff, add the 3 tbsp. of sugar gradually. Add slowly. Add 1 tbsp. vanilla flavoring. Cover pie with meringue and bake 12 to 15 minutes in a 350 degree oven. |
