B.'S MEATBALL SOUP | |
3 to 4 carrots, sliced 2 stalks celery, cut into sm. pieces (or dried celery may be substituted) 3 sprigs fresh parsley, chopped ( or 2 tsp. dried) 3 to 4 sm. potatoes, cut into cubes Other vegetables may be added according to your own taste and preference Boil all ingredients in about 3 quarts of water for about 30 minutes. MEATBALLS: 1 lb. ground beef 1 sm. onion, grated or chopped 1 1/2 c. bread crumbs 1 whole egg Salt (to taste) Pepper (to taste) Mix all ingredients together and form into small meatballs. Fry in pan. Turn to brown evenly. Remove meatballs and add to soup mixture. Add 1 1/2 tablespoons flour to leftover grease in pan and brown flour. Add 1 cup of water, stirring continuously so lumps don't form. Add to boiling soup, mixing continuously. Cook 1/2 hour longer. Add salt and pepper to taste, and enjoy! This recipe is a family favorite. |
