FRUIT COMPOTE 
1 lg. can sliced peaches, drained well
1 lg. can mandarin oranges, drained well
1 pt. strawberries, halved (or use
equiv. amt. of frozen
strawberries)
3 sliced bananas
1 lg. can chunk pineapple in
own juice (drain juice into
sm. bowl and set aside)
1 pkg. instant lemon pudding (4 serving size)
3 tbsp. lemon juice

Put all the fruit into a large mixing bowl. Add the lemon juice and pudding to the pineapple juice. Mix until smooth. Add enough water to make mixture easily stirred through the fruit. Other fruit or chunks of melon may be used also when in season.
