ENCHILADAS AZTECAS 
2 tbsp. butter
2 tbsp. flour
1 tsp. salt
1 c. milk
2 c. cheese
2 c. chopped chicken
1/2 c. chopped avocado
1/3 c. chopped tomatoes
1/3 c. pitted black olives
1/4 c. chopped onion
3 c. Monterey Jack cheese, shredded

Make a white sauce of butter, flour, salt and milk. Add 2 cups of cheese and stir until melted. Add chicken, avocados, tomatoes, black olives, onion and mix well. Put 1/3 cup mixture in center of tortilla, fold over and place in greased baking dish. Top with Monterey Jack cheese and bake at 350 degrees for 15-20 minutes.
