LEBANESE BEAN SALAD | |
1 can red kidney beans 1/2 c. parsley, chopped or dried 1 tbsp. minced onion, soaked in 1/3 c. water 2 tsp. dried mint 1 tomato, chopped 1 cucumber, peeled & diced 1/4 c. olive oil 1/4 c. lemon juice 1/2 tsp. salt 1/2 tsp. pepper 1 pkg. pita bread, cut into fourths Place beans, parsley, drained onion, mint, tomato and cucumber into serving bowl. Combine olive oil, lemon juice, salt and pepper and beat with a fork. Pour over vegetables, mix thoroughly. Refrigerate until ready to serve. Mix again before serving. Serve with pita. |
