POTATO SALAD | |
new potatoes mayonnaise finely chopped parsley salt, pepper, paprika, to taste Wash the potatoes, than cut them into halves and place in a pan of water. Boil the potatoes until you can pierce them with a with little resistance. Strain the potatoes. Put them into a pot of cold water to cool off. When cool, strain again, and put them in a bowl with enough mayonnaise to coat, mix, then refrigerate until ready to use. Just before use, sprinkle with finely chopped parsley to garnish and season to taste with salt, pepper, and paprika. Editor's Note: Optionally add finely chopped celery or ground celery seed, and sprinkle with onion or garlic powder, to taste.
