SOUFLAKI AND TZAT ZIKI 
SOUFLAKI:

1/4 c. salad oil
1/4 c. wine vinegar
1/4 c. lemon juice
1 clove garlic (1/8 tsp. garlic powder)
1 to 2 tsp. salt
1/4 tsp. pepper
Oregano to taste
1 pork tenderloin

Cut lean pork into 1 1/2 inch cubes or 1 inch slices. Marinate 3 to 4 hours. Grill and baste with marinade.

TZAT ZIKI:

2 cucumbers, grated and drained
1/2 to 1 clove of garlic, finely minced (1/8 tsp. garlic powder)
1/2 c. salad oil
1/4 to 1/2 c. wine vinegar
16 oz. sour cream
1 to 2 tsp. salt

Mix well and refrigerate. Use for sauce with souflaki.
