1 c. white sugar 1 c. brown sugar 1 c. shortening 3 eggs 4 1/4 c. flour 1 tsp. baking soda 1 tsp. baking powder 1 tsp. vanilla Cream shortening; add sugar. Beat eggs. Sift dry ingredients and add alternately with eggs to sugar mixture. Add vanilla. Have filling previously prepared and cooled. Roll dough thin and spread with filling. Sprinkle with nuts. Roll up, wrap in wax paper and store in refrigerator overnight. Slice 1/4 inch thick and bake 10 to 12 minutes at 375 degrees. FILLING: 1 pound chopped dates (or 2 1/2 cups), 1 cup white sugar, 1 cup water. Cook dates, sugar and water until soft 10 minutes. Cool and spread on cookie dough. Sprinkle with 1 cup nuts. (I use pecans.) |
