COCONUT TARTS 
2 2/3 c. flour
2/3 c. sugar
2 eggs
1/2 tsp. salt
1 1/3 c. butter
7 oz. coconut
1 1/2 c. sugar
2 eggs, well beaten

In bowl, place flour, sugar and salt. Add butter and mix by hand until butter is well mixed. To this, add eggs and work into the dough. Refrigerate 20 minutes or overnight.

Make filling by combining coconut, sugar and beaten egg; mix well. Place a little of the dough in cupcake pan, forming a cup like base and fill with filling. Bake at 350 degrees for 20 minutes.
