CHOCOLATE TRUFFLES 
3/4 c. butter
6 egg yolks
Salt
3 tbsp. heavy cream
1 lb. dark sweet chocolate
Chocolate shot
Chocolate powdered cocoa
Chocolate finely grated bitter

Melt the chocolate in enamel pan. Then place in larger pan filled with hot water. Remove from hot water bath -stir in cream and salt. Beat in 2 egg yolks. Return to hot water bath - cook slowly but beat in egg yolk every minute. Beat until thick. Remove from water bath. Beat in butter. Stir until cool. Drop by tablespoons onto flat surface - roll in small balls. Roll balls in chocolate shot, cocoa, and grated chocolate.
