CHICKEN WITH CHEDDAR AND CREAM
SAUCE
 
4 boned chicken breasts
4 tbsp. butter
4 tbsp. flour
1 1/2 c. chicken broth
2 tbsp. heavy cream
2 tbsp. dry white wine
4 slices of Cheddar cheese

Brown 4 boned chicken breasts in oil until golden. Melt 4 tablespoons butter in saucepan; stir in 4 tablespoons flour. Cook over medium high heat stirring constantly for 2 minutes. Do not brown. Add 1 1/2 cups chicken broth; mix well. Remove from heat and add 2 tablespoons heavy cream and 2 tablespoons dry white wine.

Place chicken in casserole pan. Place a slice of Cheddar cheese on each piece of chicken. Top with sauce. Bake at 350 degrees for 20 to 25 minutes, or microwave on medium high for 8 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
