SUMMER SALAD 
3 eggs, boiled and sliced into rounds
1/2 lg. onion, or to taste
1/2 c. Mozzarella cheese, cut into long strips
1/2 c. Cheddar cheese, shredded
1/2 c. ham, shaved and cut in small pieces
1 med. bell pepper, cut into pieces
1/4 c. basil leaves, fresh or to taste
1 c. red cabbage, shredded
5 to 6 c. fresh washed spinach
1/2 c. celery
1/2 cucumber, sliced

DRESSING:

1/8 tsp. pepper
1/4 tsp. parsley
1/8 tsp. garlic
1/8 tsp. Italian seasonings
1 tsp. vinegar
1/3 c. milk
1 1/2 c. mayonnaise

Add milk, pepper, parsley, garlic, Italian seasonings, and vinegar to mayonnaise and beat. This will make the dressing for the salad. Other dressing can also be used.

Add all of the ingredients (except the eggs and Mozzarella cheese) and toss the salad. Use the cheese strips and egg slices for a top garnish.
