BAKED APPLE PANCAKE 
3 lg. eggs
3/4 c. milk
3/4 c. flour
1/2 tsp. salt, optional
1 1/2 tbsp. butter

FILLING:

1 lb. tart apples
1/4 c. melted butter
1/4 c. brown sugar
Powdered cinnamon
Nutmeg

TOPPING:

2 tbsp. melted butter, optional
Powdered sugar

Preheat oven to 450 degrees. Beat egg, milk, flour and salt until smooth. Melt 1 1/2 tablespoons butter in skillet (heavy iron is best). Pour in batter and put skillet in oven. After 15 minutes, lower heat to 350 degrees. Bake 10 more minutes. If it puffs up during baking, pierce it with a fork.

Prepare filling while pancake is baking. Saute apples in butter until tender, and add cinnamon and nutmeg to taste. (This will take 7 or 8 minutes.) When pancake is done, slide it onto a platter and pour filling over one side. Fold other side over. Sprinkle with topping and serve, slicing crosswise.
