STIR FRIED TURKEY 
1 tbsp. salad oil
1 lb. turkey tenderloin breast slice or thigh 1 inch cubes
1 peeled, halved, thinly sliced onion
1 c. sliced fresh mushrooms
1 (8 oz.) can drained sliced water chestnuts
1 seeded diced green bell pepper
1 c. diagonally sliced celery
1/4 c. fat skimmed turkey or chicken broth
Soy sauce to taste

Heat oil in a large non stick, skillet or electric fry pan. Add turkey cubes and stir fry 2 minutes. Add onion and mushrooms, stir fry 1 minutes. Add remaining ingredients, lower heat. Simmer, uncovered stirring frequently until broth evaporates, about 10 minutes. Makes four servings.
