CHICKEN DIVAN 
2 (10 oz.) pkgs. frozen broccoli
1/2 c. heavy cream, whipped
3 tbsp. sherry
1 c. grated Parmesan cheese
16 generous slices chicken, preferably breasts
4 tbsp. butter
4 tbsp. flour
2 c. chicken stock
Salt and pepper

Cook broccoli according to directions. Place in large casserole. Melt butter in saucepan, blend with flour, add chicken stock gradually and cook stirring constantly until thick and smooth. Cook for 10 minutes. Add cream, sherry and seasonings.

Pour half the sauce over the broccoli; to the remainder of the sauce add the grated cheese. Arrange the chicken slices on the broccoli in casserole; pour the remaining sauce over the chicken. Sprinkle with additional cheese. Bake uncovered for 30 minutes at 375 degrees. Serves 8.
