PEANUT CHICKEN 
3 to 4 boneless chicken breasts
4 tbsp. butter
1 onion, chopped
1 clove garlic, chopped
2 tbsp. all-purpose flour
1 cup milk
3 tbsp. peanut butter
handful of peanuts

Cut chicken into 1-inch pieces, if desired, or leave in cutlet size. Brown in 2 tablespoons butter in a frying pan. Add onion and garlic and cook for 5 minutes.

Add remaining butter and flour, and brown lightly. Add milk and stir to make a white sauce. Stir in peanut butter until smooth.

Add peanuts for crunch.

Serves 4.
