FRESH SPINACH AND BASIL SALAD 
6 cups fresh spinach leaves, cleaned and torn
2 cups fresh basil leaves, cleaned
balsamic vinegar, to taste
1/4 cup olive oil
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
1/4 cup pine nuts, toasted
ground black pepper

Toss spinach and basil together in large bowl. Sauté garlic in olive oil over medium heat (Do not let garlic brown). Sprinkle salad with vinegar. Pour garlic mixture over salad and toss. Serve salad and add roasted pine nuts individually. Sprinkle with cheese and fresh ground pepper.

Serves 6.
