JALAPENO CORNBREAD 
2 eggs, slightly beaten
1 1/2 c. yellow meal
3 tsp. baking powder
1 tsp. salt
1/2 c. vegetable oil
1 c. buttermilk
3 chopped jalapeno peppers
1 (No. 3) can cream corn
1 1/2 c. grated cheese

Mix all ingredients in order listed, except cheese. Pour half the batter into greased 9x13 pan and sprinkle with half the cheese. Add remaining batter and cover with cheese. Bake at 350 degrees for 45 minutes. You can use cornbread mix and add the peppers, cheese and corn. Great with red beans.
