APPLE PANCAKE 
Peel and core 4 medium apples, slice thin lengthwise.

Preheat oven to 450 degrees.

BATTER:

2 eggs, beaten
1/2 c. milk
1/4 tsp. salt
1/2 c. stirred flour

Beat until batter is smooth.

Melt 1 tablespoons butter in frying pan to cover bottom, pour in batter and bake in 450 degree preheated oven for 15 minutes. Prick with fork when batter puffs. Reduce heat to 350 degrees for another 10 minutes. Spread some butter over baked pancake and sprinkle with some sugar.

WHILE BATTER IS BAKING:

Put 3 tablespoons butter in another frying pan and put in prepared apples. Sprinkle with mixture of:

6 tbsp. sugar
1/2 tsp. cinnamon
Dash of nutmeg

Cover and fry over low heat for 10 minutes. Stir a couple times.

Spoon apple mixture over half of pancake and fold other half over top. Sprinkle with 10X sugar. Slice (about 5 pieces) and serve hot.
