ITALIAN COOKIES (BISCOTTI) 
5 c. flour
1 1/2 c. confectioners sugar
2 tbsp. baking powder
1 c. (250 g.) butter
3 eggs
1 tbsp. vanilla

Sift together flour, sugar and baking powder into a large bowl. Add butter an mix thoroughly. Add eggs and vanilla and mix to a firm dough. Knead a floured board for 5 minutes. Shape into small balls and place on a greased cookie tin.

Bake in a 450 degrees (230 C.) oven for about 10 minutes. Makes 5 dozen.
