PERSIMMON PUDDING | |
2 sticks butter 4 c. persimmons, pureed 3 c. buttermilk 3 c. flour 1/2 tsp. nutmeg & allspice 1 tsp. cinnamon 1 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 1/2 c. pecans Melt butter in 9 x 13 inch baking dish. Mix persimmon and buttermilk. Blend in flour, salt, soda, baking powder and spice. Add butter and nuts. Mix well. Bake 1 hour at 325 degrees. Serve with whipped cream or butter-pecan ice cream. |
