CREAMED SHRIMP 
3/4 lb. peeled, cleaned shrimp
4 spring onions, chopped, including tops (or 1/4 c. minced onions)
1/4 c. melted butter
1/4 lb. sliced mushrooms (or 1 sm. can)
1 tbsp. all purpose flour
1/2 tsp. salt
Ground pepper to taste
1/2 c. sour cream (more if you like lots of sauce)

Saute shrimp with onions in butter 5 minutes or until shrimp turn pink. Add mushrooms and simmer 5 minutes more. Blend flour, salt and pepper with sour cream and add gradually to shrimp mixture while stirring constantly. Simmer until mixture begins to thicken. Remove from stove and serve over rice with salad and hot French bread.
