LEBKUCHEN
4 c. sifted flour
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. cloves
2 eggs
1 c. brown sugar
1/4 c. molasses
3/4 c. honey
1 tsp. lemon juice
1 tbsp. lemon rind
Citron (candied fruit) & nuts

Sift dry ingredients together, saving one cup of flour for rolling out dough. Beat eggs and add brown sugar and beat until mixed. Add honey and molasses and lemon juice and rind and candied fruit and nuts. Mix well. Add the dry ingredients and mix until all the flour is stirred in. Chill overnight. When ready to roll out, use the cup of flour that has been saved back. Use enough to make a dough that can be handled. Bake in a 375 degree oven for about 10 minutes. Do not overbake.

Glaze while still warm the following: powdered sugar, melted butter, 1/2 teaspoon lemon and 1/2 teaspoon vanilla extract to make a thin glaze.

This is an old German recipe that has become a tradition in our family at Christmas.
