SMOTHERED RABBIT 
1 rabbit, dressed
4 cloves garlic, minced
Seasoned salt, to taste
Black pepper, to taste
5 tbsp. vegetable oil
1 onion, chopped
1/2 c. green onion, chopped
1/2 c. parsley, chopped
1 lg. green pepper, chopped
1 c. water

Cut rabbit into serving pieces and season well with salt and peppers. In a Dutch oven, heat oil over medium flame. Add rabbit parts; brown well. Remove rabbit and saute onion in same drippings. Add garlic, green onions, green pepper and parsley. Add rabbit and water. Cover and cook until tender, adding water as necessary. Serve over cooked rice.
