SOFT GINGER COOKIES 
2 c. flour
1 tsp. baking soda
1/2 c. shortening
1 egg
1 tsp. vanilla
1 tsp. ginger
1/4 tsp. salt
1 c. brown sugar
1/2 c. molasses
1/2 tsp. lemon extract

Mix well and roll in balls. Do not flatten. Bake 350 degrees until done. Don't over bake.
