BEEF IN OYSTER SAUCE WITH PEAS 
5 tbsp. oil

BEEF MIXTURE:

1 lb. beef, flank or round, cut into 1/8 x 2 inch strips, across grain
1 tbsp. soy sauce
1 tbsp. cornstarch
1/2 tsp. sugar
3 stalks green onions, cut into 1 1/2 inch pieces
1 tsp. minced ginger
1 tsp. minced garlic

SAUCE MIXTURE:

4 tbsp. oyster sauce
1/2 tsp. sugar
2 tbsp. dry sherry
4 oz. edible pod green peas, blanched in hot water

Heat 3 tablespoons of oil in a wok over high heat. Stir-fry beef mixture until meat loses its redness. Remove, drain and store in a bowl. Heat 2 tablespoons of oil, stir-fry green onions, ginger and garlic until slightly brown. Add sauce mixture, stirring constantly until bubbles appear. Add peas, cooked beef and stir-fry for 10 to 15 seconds. Serve hot.
