APPLE FRITTERS 
1 1/2 c. all-purpose flour
1 tbsp. sugar
1/2 tsp. salt
2 tsp. baking powder
3 c. peeled, finely chopped apples
2/3 c. milk
2 eggs, beaten
1 tbsp. vegetable oil
Vegetable oil
Powdered sugar

Combine first 4 ingredients in a large bowl, stirring well. Add apples, milk, eggs and 1 tbsp. oil; stir mixture just until moist.

Carefully drop batter by rounded tablespoonfuls into deep, hot oil (370 degrees). Cook only a few at a time, turning once. Fry 2 or 3 minutes or until fritters are golden brown. Drain well on paper towels. Sift powdered sugar over fritters. Yields: 3 dozen.
