EASY CHILI
1 lb. lean ground beef or ground turkey
1 med. to lg. yellow onion (diced)
1 tbsp. minced garlic
1 (10 3/4 oz.) can condensed tomato soup
2 (15 oz.) cans chili beans (or kidney or pinto beans)
1 tbsp. chili powder
Crushed red pepper (optional)
Cayenne pepper (optional)

Brown meat in an electric frying pan, wok or whatever you have; add diced onions and minced garlic, stirring well. Add soup and beans (including liquid). Stir well. Add 1 tablespoon chili powder and whatever of the other spices you wish. Simmer at least 1/2 hour, stirring often to keep chili from sticking (an hour is better). Taste occasionally, adding spices if needed to acquire the "hotness" you prefer. Serves 3-4. Makes great lunch when reheated in a microwave oven.

Since microwave ovens vary in power, you may need to adjust your cooking time.
