PEANUT BUTTER CUP COOKIES | |
1/2 c. butter 1/2 c. peanut butter 1/2 c. sugar 1/2 c. brown sugar 1 egg 1/2 tsp. vanilla 1 1/4 c. flour 3/4 tsp. baking soda 1/2 tsp. salt 1 (10 oz.) box Reeses miniature chocolate covered peanut butter cups Cream butter, peanut butter and both sugars. Beat in egg and vanilla. Blend in flour, salt and soda. Shape dough into 1 inch balls. Place in ungreased 1 1/2 inch tart tins. (I use mini muffin tins.) Bake 8-10 minutes at 350 degrees or until lightly browned. Immediately after removing cookies from oven, press a Reese's peanut butter cup into the center of each cookie, until only the top of the peanut butter cup shows. Let cool for 10 minutes, then remove from tins. Lots of times I double this recipe and use a bag of peanut butter cups. |
