STRAWBERRY SHORT CAKE | |
1 Tender Shortcake (recipe follows) 2 pt. boxes fresh strawberries 1 c. sugar 1/2 c. heavy cream 1 tsp. vanilla extract 2 tbsp. soft butter 1. While shortcake is baking, gently wash berries in cold water. Drain; hull. 2. Reserve 6 large berries. Slice remaining berries into medium bowl. Add sugar; stir gently. Set aside until ready to use. 3. In small bowl, whip cream until stiff. Stir in vanilla. 4. Split warm shortcake in half crosswise. Place bottom half, cut side up, on serving platter. Spread with butter. Spoon on half the sliced berries. 5. Top with other half of shortcake, cut side down. Spoon on rest of sliced berries and the whipped cream. 6. Garnish with whole berries. Good. |
