RICE WITH CHICKEN AND CHEESE 
1 med. onion
1 tbsp. fat or oil
3 c. water or chicken broth
1 c. uncooked rice
1 1/2 c. cut up cooked chicken
1 c. cut up cheese
Salt and pepper to taste

Chop onion and cook in fat or oil until tender. Add water or chicken broth. Heat to boiling and add rice. Lower heat, cover and cook slowly 20 minutes. Add chicken, cheese, salt, and pepper and cook over very low heat until cheese melts. Makes 6 servings, about 2/3 cup each.
