DELICIOUS BACON FRIED CARROTS 
In skillet cook 3 slices of bacon until crisp, remove; set aside. To bacon fat, add 1 pound sliced pared carrots and 1 sliced medium onion. Sprinkle with 1/2 teaspoon salt, 1/8 teaspoon pepper. Cook over low heat, covered about 10 minutes. Uncover; cook stirring occasionally, until carrots are slightly brown. Add crumbled bacon.
