SURPRISE CAKE WITH BEETS 
1 1/2 c. oil
2 eggs
1 c. sm. curd cottage cheese
1 tsp. salt
2 tsp. cinnamon
2 c. sugar
2 tsp. vanilla
2 1/2 c. flour
1 c. beets, cooked & drained
1 c. crushed pineapple
1 c. chopped nuts
2 tsp. baking soda

Mix together oil and egg. Put cottage cheese through blender. Add to oil and eggs. Mix together remaining ingredients and add to above mixture and mix well. Pour in greased and floured bundt pan or angel food. Bake at 375 degrees for 40 to 50 minutes. Cool and frost.

FROSTING:

1 (8 oz.) pkg. cream cheese
1 stick butter
2 1/2 c. powdered sugar
1 tsp. vanilla

Mix well and frost cake.
