RICE PUDDING 
1/2 c. UNCLE BEN'S® converted rice
4 eggs
1/3 c. sugar
4 c. milk
1/2 c. seedless raisins
1 tbsp. real vanilla

Cook rice according to package directions. Beat together eggs and sugar. Mix all ingredients. Pour into well-buttered casserole. Sprinkle top lightly with cinnamon and grated nutmeg.

Bake at 325 degrees about 35 minutes until silver knife inserted into center of dish comes out clean. Be sure not to over bake as custard then becomes watery.
