1 c. UNCLE BEN'S® quick rice 3/4 c. water 1 can Campbell cream of mushroom soup 4 lb. roast beef (sirloin or tip) Put rice in bottom of a casserole dish. Put a cake rack or meat rack over dish so that roast beef sits on top of dish. The drippings of roast beef drip into the rice during cooking. Place in 350 degree oven and cook to your likeness (rare, medium, or well-done). Once during the cooking time, remove the rack with meat on it and stir the rice so it won't stick. Serves 3-4. |
