MEDITERRANEAN POCKET BREAD 
2 pkgs. yeast
2 c. warm water
1 tbsp. brown sugar
2 c. unbleached enriched flour

Combine in order given and beat until smooth, about three minutes. 2 tsp. salt

Add and mix well.

Add to make a medium stiff dough. Knead on a floured board until smooth, 5 to 10 minutes. Cover dough with bowl and let rest 30 minutes. Roll into a 16 inch log; cut into 16 pieces and shape into balls. Roll out into 5 inch circles. Place on greased baking sheets. Let rise 30 to 45 minutes until puffy. Bake at 500 degrees on bottom rack about 10 minutes. Remove and cover while cooling. Cut pocket in bread and fill with your favorite filling. Makes 16 loaves.
