ZUCCHINI BREAD | |
2 c. Bisquick 1-1/2 c. shredded zucchini 3/4 c. sugar 1/4 c. vegetable oil 3 eggs 1 tsp. vanilla 2 tsp. cinnamon 1 tsp. nutmeg 1/2 c. chopped nuts Preheat oven to 350°F. Grease bottom only of 9 x 5 x 3 loaf pan. Beat all ingredients on low speed scraping bowl constantly for 30 seconds. Beat on medium speed, scraping bowl, one minute. Pour into loaf pan, bake until wooden pick inserted in center comes out clean, about 55 minutes. Cool 10 minutes, remove from pan. Cool completely before slicing. Store in refrigerator. |
