HOT MILK CAKE WITH BAKED ON COCONUT FROSTING | |
4 eggs, room temperature 2 c. sugar 2 tsp. vanilla 1 c. whole milk 3 tbsp. butter 2 c. sifted flour 2 tsp. baking powder, loosely leveled off with finger (not exactly rounded) 1/8 tsp. salt Preheat oven to 350 degrees. Prepare pan: thoroughly grease a one piece tub e pan. Cut a piece of waxed paper three inches larger than the bottom of the pan. Grease paper, then flour paper and sides of pan. Put milk and butter on low heat, don't let it boil. Beat eggs with the sugar until thick and lemon colored. Do not underbeat. Add vanilla. Sift flour with baking powder and salt. Add 1/3 of the flour mixture, then 1/2 the milk, another 1/3 of the flour, remaining milk and then remaining flour. Batter will be thin. Bake at 350 degrees for about 40 minutes. Do not peek for the first 35 minutes. BAKED ON COCONUT ICING: 3/4 c. brown sugar (packed) 2 tbsp. milk 1 stick butter 1 c. coconut Combine ingredients in saucepan. Bring to a rolling boil. Spread on sides and on top of cake. Put cake under broiler heat until frosting is golden brown. Watch carefully. |
