BRAN MUFFINS 
1 c. 100% Bran
1 c. boiling water
1/2 c. butter
3/4 c. honey or 1 1/2 c. sugar
2 eggs
1/2 tsp. salt
1 1/2 tbsp. baking soda
2 1/2 c. flour or 1 1/2 c. whole wheat and 1 c. white
2 c. 40% bran flakes
2 c. buttermilk
1 c. raisins or diced dates

Soak 100% Bran 20 minutes in boiling water. Let cool. Blend well butter, honey or sugar, eggs, salt and soda. Mix flour, 40% Bran flakes. Combine all ingredients. Add buttermilk and raisins. Bake in well greased muffin tins for 15 to 20 minutes at 375 to 400 degrees. Makes 3 dozen. Batter can be stored for 7 weeks in refrigerator.
