LEMON CHIFFON PIE | |
4 egg yolks, well beaten 1 1/2 tbsp. Diet Lite Sweetener 1/2 tsp. salt 3 tbsp. lemon juice 1 tsp. grated lemon rind 1 tbsp. gelatin (Knox) 1/4 c. cold water 4 egg whites, well beaten In blender put everything but the egg whites, gelatin and water. Blend thoroughly. In a cup put the cold water and the gelatin to soften. Bring to a boil the lemon and egg yolk mixture. Quickly add the gelatin. Stir well. Add stiffly beaten egg whites. Fold into hot mixture until thoroughly blended. Pour into crust. Set in refrigerator to chill. CRUST: (Optional) One crushed Wasa lite rye mixed with cinnamon and Diet Lite Sweetener to taste. May also be sprinkled on top. Yield: 4 ounces protein (1/2 bread serving if crust is used). |
