HEAVENLY LEMON PIE 
1 c. granulated sugar
1/4 tsp. cream of tartar
4 egg whites

Preheat oven to 275 degrees. Sift together sugar and cream of tartar. Beat egg whites until stiff, but not dry. Gradually add sugar mixture continually beating until thoroughly blended and meringue falls back into folds. using a greased 9 inch Pyrex pie plate, cover with meringue, being sure to build up sides. Bake 1 hour at 275 degrees.

FILLING:

8 egg yolks, slightly beaten
1 c. sugar
6 tbsp. lemon juice
2 tbsp. lemon rind, grated
2 pts. heavy cream, divided, whipped
