SCALLOPED ORANGE ROUGHY 
1 lb. orange roughy fillets
1 c. bookbinder bread crumbs
1/4 c. Parmesan cheese
1/2 c. butter
1/3 c. liquid coffeemate lite
1/2 tbsp. lemon pepper

Place butter in microwave safe dish and microwave for 45 seconds until melted. Add bread crumbs, Parmesan cheese and lemon pepper. Set aside.

Arrange fillets in a 10 inch pie dish. Placing thick end toward edge. Cover with plastic wrap and microwave for 4 minutes on high. Turn fish over, spread bread crumb mixture over fish and pour coffeemate over all. Microwave 4 to 5 minutes until fish flakes. Allow to stand 5 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
