RAW APPLE CAKE 
4 c. apples, peeled & diced
2 c. sugar
2 c. flour (all-purpose)
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
2 eggs, beaten
2 tsp. vanilla
1/2 c. oil
1 c. chopped nuts
1 c. coconut (optional)

Pour sugar over apples and set aside. Sift dry ingredients and set aside. Beat eggs. Add vanilla and oil to sugar and apple mixture. Then mix in dry ingredients and add nuts and coconut. Pour into 13 x 9 x 2 inch pan (greased and floured). Bake at 350 degrees for 50 minutes or until done. May serve with whipped topping.
